To this "asparagus salad", I add a pinch, OK two pinches of red pepper flakes and a pinch of orange zest, YUM-O!!

  • 1/4 cup sherry vinegar
  • 1 tsp sugar
  • Kosher salt and freshly ground black pepper
  • 2 tbsp minced fresh oregano
  • 1/2 cup extra-virgin olive oil
  • 2 lbs asparagus, ends trimmed
  • 1 lb fresh green beans, cut into pieces
  • 3 large carrots, shredded (about 2 cups)
  • 1 cup canned black beans, drained and rinsed
