Ingredients

  • 2 tbsp canola oil
  • 1 tbsp unsalted butter
  • 2 large onions, finely chopped
  • 2 cloves garlic, minced
  • 3 tbsp tomato paste
  • 2 tbsp sweet paprika
  • 1 tsp crushed red pepper
  • 8 oz sliced baby bella mushrooms (or white mushrooms)
  • 8 chicken thighs, on the bone, skin removed
  • kosher salt
  • fresh ground black pepper
  • 2 tbsp dried marjoram
  • 8 oz chicken stock or low sodium chicken broth
  • 8 oz low fat sour cream (I use Daisy brand.)
  • 2 tbsp unbleached all-purpose flour (or a gluten-free alternative)
