Don’t let the coffee in the title scare you. Coffee brings out the flavor of the chocolate x’s 10! These fluffy, no middle, round cakes are simply fabulous. They are super light, airy and fluffy with a rich chocolaty flavor. I can make out the Baileys in the doughnut and the frosting glaze but when I asked Scott he said “No”….So I’ll have to leave it to you to be the judge. If you’re worried about these being safe for children…Use your best judgment. If you’re 5 your old is recovering from an alcohol addiction I’d say no way, but really the amounts of liqueur are so little it would have no effect. I feel like I can say this without worry because Daphney, my 12 LB Fatsy Patsy Shaggy Beggar Monster, JUMPED up to a table I had these displayed on for a photo opp and devoured an entire doughnut, licking the floor to get every crumb to cover her tracks. She wasn’t exactly the smoothest criminal because after initial guilt wore off, she sat in the kitchen under that little table WHINING for hours hoping Mommy would get her another one of those Heavenly Treats! I kid you not… Cried like she knew I was leaving her for a weekend today! It was unbearable to the ears but hilarious. Pre-heat the oven to 350° F. In the bowl of an electric mixer fitted with a paddle attachment, cream the butter and 2 sugars on high-speed until light and fluffy, approximately 5 minutes. Lower the speed to medium, add the eggs 1 at a time, Add the vanilla and mix well. In a separate bowl, whisk together the Baileys, Frangelico, sour cream, and coffee. Set aside In another bowl, sift together the flour, cocoa, baking soda, and salt. On low-speed, add the buttermilk mixture and the flour mixture alternately in thirds to the mixer bowl, beginning with the buttermilk mixture and ending with the flour mixture. Mix only until blended. Fold the batter with a rubber spatula to be sure it’s completely blended. Spoon batter into doughnut pan so each cup is filled about 2/3 of the way. Use the back side of a small spoon to help smooth the batter evenly. Bake for 15 minutes or until toothpick comes out clean. Cool on wire rack. BAILEYS CREAM CHEESE FROSTING GLAZE: Beat cream cheese with powdered sugar until smooth and light. Add milk, Baileys and vanilla. Add 20 drops of Green Food Coloring (Optional) Mix until blended and clumps are gone and green color is mixed throughout. Dip cooled Doughnut into glaze and let harden.
I suggest storing these in an airtight container in the refrigerator. I didn’t, I left them out on the table and they did dry out a bit =/
