A creative way to get kids to eat their veggies – fun pepper “jack o lanterns” with a pizza flavored filling. Hidden spinach brings more protein and nutrients, and everyone loves pizza!
Bring water to simmer, add cornmeal. Stir consistently for first few minutes, then stir every five minutes. Once it comes together (30-35 minutes) add sea salt to taste.
Add tomato paste, rosemary, oregano, garlic, basil, spinach and cheese to polenta, stir to combine.
Cut the top off the peppers, clean out ribs and seeds. Carefully carve a jack o lantern face into each pepper. Fill with polenta and replace top of pepper. Bake @ 350 for 30-35 minutes. Serve over greens.
