I have to give credit to my mom-mom for finding this recipe, she found it in a random magazine and asked me to try it out.(my photo doesn't look super pretty, but they are absolutely delicious!)

  • 1 cup sugar
  • 2/3 cups light brown sugar
  • 1 stick + 6 tablespoons (14 tbsp) unsalted butter, softened
  • 1 tsp salt
  • 1 tbsp vanilla extract
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/8 tsp baking soda
  • 1 1/2 cup dried cranberries
  • 1 1/4 cup chopped pistachios (shelled, unroasted, unsalted)
  • 1 1/2 cup white chocolate chips


Step 1

Heat oven to 350 F. Grease a 9x13 baking dish.

Step 2

In a large bowl, stir sugar, brown sugar, butter, and salt until combined. Stir in vanilla extract and eggs (one at a time) until combined. Add flour, baking powder, and baking soda to bowl and stir until almost combined.

Step 3

Stir in 1 cup of the dried cranberries, 3/4 cup pistachios, and 1 cup of white chocolate chips until combined. Spread batter evenly into baking dish and smooth the top. Scatter the remaining 1/2 cup of cranberries and 1/2 cup of pistachios.

Step 4

Bake for about 25 minutes (I added another 2) or until center is just set and a toothpick inserted into center comes out with moist crumbs. Just before removing blondies from oven, scatter the remaining 1/2 cup of white chocolate chips and return to oven briefly (about 30 seconds- 1 minute). Remove and let cool on wire rack. Cut into bars, serve, and enjoy! (Makes 24 bars)
