Ingredients
  • 8 thick slices brioche bread
  • ¼ cup + 1 tablespoon butter, divided
  • 1 cup brown sugar
  • ⅓ cup whole milk
  • Pinch of salt
  • ½ cup chopped toasted pecans
  • 4 eggs
  • ½ cup heavy cream
  • ½ teaspoon cinnamon
  • 2 teaspoons vegetable oil
Directions
  1. Preheat the oven to 275 F.
  2. Place the bread slices on a parchment-lined baking sheet.
  3. Bake the bread for 5 minutes, then flip and bake for another 5 minutes.
  4. Melt ¼ cup of butter in a small saucepan over medium heat.
  5. Add the milk and brown sugar, whisking to combine the ingredients.
  6. Lightly boil for 3 minutes or until the sauce coats the back of a spoon.
  7. Add the salt and pecans and cook for 1 minute more. Remove the sauce from the heat and set aside.
  8. Crack the eggs into a medium-sized bowl along with the cream and cinnamon.
  9. Whisk the batter thoroughly.
  10. Using tongs, dip the bread liberally, one piece at a time, into the batter. Place coated bread slices back on the baking sheet.
  11. Melt the oil and remaining tablespoon of butter in a frying pan.
  12. Working in batches as necessary, cook the French toast over medium heat on one side until browned, 2 to 3 minutes.
  13. Flip the French toast slices and fry until browned on the opposite side, another 2 to 3 minutes.
  14. Portion the French toast out onto plates and serve with the caramel pecan sauce.
