Ingredients

  • 4 oz plus 1 tablespoon unsalted butter, cut into 1 tablespoon pieces
  • 2 tsp Maldon salt
  • 1/2 cup boiling water
  • 1 1/4 cup
  • 1/4 cup dried edible lavender
  • 3 tbsp plus 1 teaspoon loose Earl Grey tea leaves
  • 3/4 cups boiling water
  • 16 oz bittersweet chocolate, finely chopped
  • 9 large eggs, separated and at room temperature
  • 1/4 cup unsweetened cocoa powder, sifted
  • 2 tsp pure vanilla extract
  • 1 tsp table salt
  • Maldon salt
