A creative way to get kids to eat their veggies – fun pepper “jack o lanterns” with a pizza flavored filling. Hidden spinach brings more protein and nutrients, and everyone loves pizza!

  • 4 orange bell peppers
  • 4 cups water
  • 1 1/2 cup polenta (coarse ground cornmeal)
  • sea salt (to taste)
  • 1/2 cup tomato paste (one 6 ounce can)
  • 3 sprigs fresh rosemary
  • 1 tbsp dried oregano
  • 2 cloves garlic, minced
  • 12-15 leaves fresh basil, chopped fine
  • 1 cup fresh baby spinach, chopped fine
  • 1/3 cup grated (dairy free / vegan) cheese


Step 1

Bring water to simmer, add cornmeal. Stir consistently for first few minutes, then stir every five minutes. Once it comes together (30-35 minutes) add sea salt to taste.

Step 2

Add tomato paste, rosemary, oregano, garlic, basil, spinach and cheese to polenta, stir to combine.

Step 3

Cut the top off the peppers, clean out ribs and seeds. Carefully carve a jack o lantern face into each pepper. Fill with polenta and replace top of pepper. Bake @ 350 for 30-35 minutes. Serve over greens.
