Ingredients

  • 2 1/2 tbsp creamy natural peanut butter
  • 2 tbsp + 2 teaspoons rice vinegar, or apple cider vinegar
  • 1 tbsp hemp oil, or extra virgin olive oil
  • 2 tsp maple syrup
  • 1 1/2 tsp gluten-free tamari, or soy sauce
  • 1/2 tsp orange zest
  • 1/2 tsp grated ginger
  • 1/4 tsp grated garlic
  • 1 head lacinato/dinosaur kale, stemmed + chopped
  • 1 cup shelled edamame beans
  • 1 red bell pepper, thinly sliced
  • 2 carrots, thinly sliced
  • 1/3 cup chopped peanuts
