The 3-Ingredient Meal Matt Damon's Family Absolutely Loves
Matt Damon, father of four and silver screen star best known for his work as amnesiac CIA operative Jason Bourne in the eponymous "Bourne" series, knows just like any other parent how difficult it can be to serve up healthy dinners every night. He freely admits that he's not a wizard in the kitchen, but he still ensures that his kids get their share of vegetables.
Damon's secret? A simple three-ingredient meal of pasta, butter, and a powerhouse green veggie. "I cook pasta with butter and steam broccoli," he told PEOPLE. "It's all about getting enough healthy food in front of them every three hours." It's a big hit with the Damon clan, in part because it's simple to whip up and Damon's children are actually fans of the vegetable. If you want some for yourself, all it takes is 10 minutes or less to have a delicious meal that adds a serving of fresh veggies to you and your kids' diets. Its simplicity also makes it extremely customizable, as you can easily substitute the butter for your favorite pasta sauce, broccoli for your family's veg of choice, or add even more vegetables with a two-ingredient green pasta dough.
Many parents know all too well the pain of trying to get kids to eat their vegetables (or eating a portion themselves). Even something like blending veggies into smoothies can be hit-or-miss no matter how good they are because of the aesthetics or flavor. But veggies are important for a healthy diet, especially since they have so much to offer the culinary arts.
Making good food for picky kiddos
Thankfully, as Matt Damon has proven, you don't need to be an expert chef to serve up healthy meals that will make even the most veggie-hating rugrat ask for seconds. There are plenty of quick and easy recipes, both vegetable-heavy and otherwise, that can put a good, healthy meal on the table.
One example of an easy recipe that you can make at almost any skill level while still achieving major flavor is miso and ginger-glazed salmon. It's easy, delicious, and healthy, making it perfect for a family dinner. Roast beef, fajitas, paninis, and pastas are all examples of quick and easy at-home meals that can be easily modified to include plenty of vegetables while appealing to a wide variety of palates. You can also add extra servings of veggies to existing family favorites if you're looking to ease the kiddos into eating more produce.
When it comes to helping kids enjoy vegetables, one of the most important things is to start young, as Damon told PEOPLE. Introducing your kids to vegetable-focused meals at an early age goes a long way towards helping them enjoy greens more in the future. Possibly the most important part, though, is focusing on making a good meal instead of just getting the vegetables down. No one likes a plain bag of steamed frozen veggies, including you, so don't try to force the kids to like them, either. Find out what veggies they like and how they like them. Ultimately, the best way to get kids to enjoy vegetables is to make them enjoyable.
