The Costco Food Court Hack To Make The Best Dessert Combo
Who knew, when we ran down the list of the best and worst Costco desserts, that one major contender was hiding right next to the ultra-cheap hot dogs in the food court? A Foodie feature writer covered the best Costco food court hacks and turned our world upside down with a cheap, delicious DIY sweet treat that has us coming back for more again and again ... an ice cream sandwich made with the warehouse retailer's chocolate chip cookies and a helping of its soft serve.
As seen on all manner of social media platforms, all you have to do is order two of Costco's Double Chunk Cookies at $2.49 apiece, as well as a cup of soft serve for $1.99. Using a spoon, scoop out the soft serve and slather it generously on the flat side of one cookie, then sandwich the other cookie atop it. The resulting ice cream sandwich is a two-hand affair that's perfect for splitting with a loved one. It's scrumptious, fresh, and plenty filling for an arduous trip scooping up bulk bargains.
All together, the ingredients for this treat only run about $7, which we think is pretty darn impressive for a dessert that's this weighty and delectable. Anyone else remember the McDonald's savory ice cream "sandwich" hack that layered a McFlurry between two hash browns and made us question our collective sanity? Yeah, we think this make-your-own ice cream sandwich is much better, too!
Costco has something of a rep for delicious ice cream sandwiches
The term "ice cream sandwich" was first coined in 1899 to name a treat sold by street vendors in New York City on hot days, the successor of a handheld frozen dessert called a "hokey-pokey." Nowadays, Costco is a one-stop shop for all the ice cream sandwiches your heart could desire ... and not just the ones you make yourself in the food court! In 2024, Nightingale ice cream sandwiches achieved cult popularity at Costco. The Cookie Monster flavor was a summer VIP at warehouses, selling out in just one weekend, but, in May 2025, Costco brought in a Strawberry Shortcake flavor that packed a thick schmear of 14% butterfat strawberry ice cream between two soft, sweet brown sugar cookies. Also in spring 2025, Ricco Gelato Sea Salt Caramel Snickerdoodle Sandwiches went viral. This sandwich was actually made with gelato layered between snickerdoodles, and it kind of broke the sugar-loving internet for a few weeks.
Fancy a more traditional take on ice cream sandwiches? As of this writing, Costco also currently stocks Oreo Frozen Dessert Sandwiches for that inimitable cookies-and-cream dopamine hit, FatBoy ice cream sandwiches that are your typical chocolate-wafer-and-vanilla-ice-cream specimens, only way chunkier, and Thelma's handmade ice cream sandwiches. Not all of these will be available in every warehouse, of course, but you can clearly see that, if you are a connoisseur of ice cream sandwiches, Costco has you covered!
