Like pumpkin seeds, which are also eaten after roasting, most sunflower seeds available at the store have been roasted and salted. If you wish to moderate your salt consumption, you may want to watch out when eating sunflower seeds, as munching them in bulk can spike sodium levels. This is especially true for flavored varieties. Sunflower seeds are also calorie-dense, which might be worth noting for those trying to maintain or lose weight. Furthermore, sunflower seeds contain high levels of phosphorus, an essential nutrient that can, nonetheless, be dangerous in high levels to some folks with kidney issues. Like so many foods, sunflower seeds are best enjoyed in moderation.
