Topping a fish sando can mean so much more than tartar sauce ... even tartar sauce spiked with wasabi for a better sandwich! Whether you're bored with the default condiment for your oceanic handhelds or you're really not a fan of the mayo in tartar sauce — plenty of folks will cop to that second one — you have options. For our money, we like a sauce with Mexican flair that takes its inspiration from traditional crema Mexicana. That would be avocado crema. At its core, this condiment is made with a creamy base, mashed avo, and lime juice to keep the fruit from browning when it sits (did you know that avocado was a type of fruit?).

First, you have to pick your core cream. We've seen very successful cremas made with sour cream, Greek yogurt, or store-bought Mexican cremas that come in tubs or squeeze bottles. You could technically take a commercial or homemade tartar sauce and add avocado if you wanted to preserve some of the "original" fish sandwich flavor, but that's strictly optional. Pick a nice, ripe avocado and mash the flesh after peeling and pitting. We also love the bold zest of juice from fresh limes. 

For bonus flair, go ahead and add optional ingredients like salt and pepper at the basic end all the way to minced garlic, diced jalapeño, and leafy cilantro. Spread your fish filet thickly with this sauce, and you have a creamy, dreamy sandwich that's much longer on freshness than a sammie spread with tartar. You'll find you have tons of options to push your meal in a fusion direction that will delight all the diners around your table.

Avocado crema is going to bring a lot to your fish sandwich, including vegetal brightness and a beautiful, vibrant green hue that makes your lunch or dinner worthy of an Insta snap. But crema alone need not be your destination when it comes to a bold, Mexican-inspired fish sandwich that will transport your tastebuds to Casa Flavortown. May we recommend a pile of shredded Oaxaca cheese, some scrumptious cabbage slaw, and perhaps a spoonful of your favorite pico de gallo to really punch up the fresh factor? Looking for the biggest flavor punch? We highly suggest a mound of pickled red onions. Serving your fish patty griddled between two corn tortillas would also add textural and flavor interest to your fish sandwich, but we think these ideas will still taste luscious with your roll or bun of choice.

Possessed of natural creaminess and mild flavor, avocado is already a natural match for grilled, fried, or blackened fish that lets the protein really shine. When you mix it into a dairy-forward medium with a punch of lime juice, however, you get a condiment that complements your flaky white fish in every way. You can choose to make your seafood share starring status with a bevy of other ingredients that play up the Mexi-fusion aspects of your sando, or simply enjoy your fish with a schmear of sauce and nothing else. Either way, we recommend washing it down with a Mexican Coke, which tastes different thanks to real sugar.
