In our opinion, canned potatoes are a convenience food that suffers from a shortage of appreciation. They're an underrated ingredient for easy mashed potatoes, for one thing, and we can't say enough about their utility in bulking up that most beloved of breakfast dishes: scrambled eggs. Eggs are not only nutritious but are also endlessly versatile. Cubed or hashed canned potatoes might just be an MVP when it comes to finding partners for your eggs that might already be hanging out in your pantry (right alongside the soup packets that upgrade your morning meal).

Per social media, all you have to do is fry up your drained can or cans of potatoes in your fat of choice until they're crispy and hot. Season them as you'd like with the contents of your spice cabinet. Salt and pepper are the bare minimum, but feel free to get garlic, onion powder, paprika, Italian seasoning, or even curry powder up in there! Once your potatoes are just about ready, go ahead and smother them in eggs that you have already whisked. 

Let the scrambled eggs cook up around your potatoes, turning frequently so that nothing burns on your hot pan. Just like that, you have a potato-egg scramble that's warm and hearty for filling hungry bellies and which will go delightfully with a squirt of ketchup or maybe some fresh salsa. Got a few extra ingredients? This breakfast delight is just begging to be improved upon.

Eggs + potatoes + anything = happiness

Adding canned potatoes to scrambled eggs is a pretty solid meal all by itself, but it's also the basis for building a complex breakfast hash or scramble. It's even filling enough to star in that weeknight fave, breakfast for dinner. Any meat will really round out this dish in a way that adds protein and heft, whether you opt for fellow breakfast superstars like ground sausage and bacon, a pack of lean ground chicken, or some Mexican chorizo that you've used to spice up your eggs. Not a meat eater? Think beans! Some drained canned black beans will enhance the protein content of your scramble deliciously, especially if your seasonings include half a packet of taco seasoning.

For that matter, don't forget the veggies as well! You can continue with the themes of ease and convenience and toss in some frozen veggies — defrost them in the pan first — like corn, broccoli, or spinach. Got some peppers and onions in the freezer? Spare yourself some chopping with aromatics that already pair well with the contents of an egg carton. The veggie love train need not stop chugging once your eggs are cooked, either. Go ahead and top your scramble with chopped green onion, ripe avocado, diced tomato, or meaty cooked mushrooms. And, of course, eggs and cheese are perfect culinary besties. Sprinkle a couple handfuls of queso over your eggs as a finishing touch and let it melt over the residual heat for an egg dish that will be devoured with a fork or shine between two slices of your favorite breakfast bread.
